500 g gluten-free bread flour (Molino/Schar Mix B/Nutrifree) | |
1 tablespoon dry yeast | |
1 tablespoon honey | |
½ tablespoon salt | |
4 ½ tablespoon olive oil | |
2 cups water |
Directions

Mixing the ingredients
To a large bowl of a stand mixer add flour, dry yeast, water and honey. Mix until a dough starts to form and then, after 2-3 minutes add olive oil and salt.
Keep kneading the dough for another 3-4 minutes until it becomes smooth and elastic.

Shape the pitas
Once the dough is ready, place it onto a floured surface (the dough can be a bit sticky) and divide the it into 9-11 pieces while each piece should weigh around 100g (use a kitchen scale to help you with that). In order to shape each pita bread, take 1 ball (While keeping the others covered) and press it into a flat disc using a rolling pin. Make sure the rolling pin and your hands are slightly floured during this process.
Roll each disc into the desired size while making sure that its thickness won’t be over half a cm. Repeat the shaping process with the rest of the dough balls.

Proofing time
Before baking the pita bread let them proof for about 30-40 minutes on the baking tray (while they are already shaped). Don’t forget to cover them with a damp towel.
About 10 minutes to the end of the proofing time, you can already preheat your oven to 240c-250c degrees.

Bake the pita bread
Once the oven is hot enough, place one tray inside the oven and bake the pita bread for about 5-7 minutes. After a few minutes, you should already see the pitas are nicely puffed and they start to have a golden color. Once the dough has puffed and the pitas have a nice golden color, you can take them out of the oven (if we keep them in the oven for too long, they might dry)
After taking the pitas out of the oven, wrap them in a clean dishtowel as soon as possible.
