Healthy, gluten free, oatmeal-banana pancakes

A super easy recipe that can be perfect for any breakfast, brunch, or even as a snack. And the bonus? It’s healthy and gluten free!

Ingredients

2 bananas Ripe bananas will be the best
2 eggs
1/2 cup almond milk You can also use regular cow's milk
1 teaspoon vanilla extract
1 1/2 cups gluten free rolled oats
2 teaspoon baking powder
Pinch of salt
Oil for cooking Vegetable oil, coconut oil, olive oil or butter.

Mix & blend all the ingredients

In a blender, combine the peeled banana, eggs, almond milk, vanilla extract, oats, baking powder, and salt. Blend until completely smooth and allow the batter to stand for 10-20 minutes until thickened slightly.
Tip: If you don’t have a big blender (For example, a single-serve blender), you can just grind the oats and then mix all the ingredients together in a large bowl, using a whisk.

Preheat your pan

Heat a non-stick frying pan over medium heat and lightly coat it with oil (coconut oil, olive oil) or butter.

Cook the pancakes

Once the pan is hot enough, add about 2 tbsp of the batter to the pan for each pancake and cook for 1-3 minutes on each side, until golden brown on both sides. If you find that pancakes are burning, or even browning, too quickly then you should lower the heat.
Wipe the pan and clean it between each batch and repeat with more oil and remaining batter.

Serve with maple syrup, fresh fruits, chocolate, halvah spread, or any other favorite toppings.

Notes

Besides of maple syrup, my favorite spread for pancakes it also Halvah spread because it is SO tasty and healthy. Making a halvah spread is extremely simple and all you will need is a row tahini and honey/dates syrup.
To make the halvah spread, mix the two ingredients when the ratio should be 1:1. Therefore, if you use ⅓ cup of tahini, use a ⅓ cup of honey/dates syrup.
I prefer it to be a little less sweet so I use a little less honey/dates syrup. I recommend adding your honey slowly and keep tasting your Halvah spread until you are happy with the result. ENJOY!

    The Oatmeal banana pancakes are amazing! I ate them with some frozen mixed berries that I heated up and mixed with some sf maple syrup. Very filling! Would love to have the nutritional info!
