This story starts with a girl (me 🙄) that is always hungry in the morning but doesn’t always have the time to cook something. Most of the GF “go-to” snacks are just not that tasty for her and they are not that healthy as well (Correct me if I’m wrong or if you have good recommendations) 🧐

Anyways 😬 I looked up for an easy, delicious, recipe as a morning snack and the result is in front of you 😍😋!!!

Gluten-free bites made from puffed rice (100% rice), peanut butter (100% peanuts), honey, and a little chocolate chips (70% cocoa powder) 🥰❤️

These rice snacks were a real success over here and everyone loved it 😋👌 Really delicious and it literally takes 5 minutes to make!

Ingredients

Adjust Servings
2 .5 cups puffed rice Brown rice or regular
230g peanut butter
3 tablespoon honey/maple syrup
½ cup chocolate chips I used 70% cocoa powder

Directions

Baking tray Preparation

Take a medium-size tray - about 25cmX30cm - and pad it with a baking sheet.
Mark as complete

In a small pan

Melt your peanut butter and honey/maple syrup together on very low heat. while constantly mixing it. Be careful not to burn it, this process should take about a minute (Depends on the heat). Put it aside.

Mix all ingredients together

n another bowl mix all ingredients together - First add the puffed rice, then add the peanut butter, mix well, add the chocolate chips, mix again.
Once all ingredients are well mixed, pour the mixture onto the baking sheet (inside the tray) Spread the mixture inside the tray and tighten it up/press on it using a spoon.

Freezer the mixture

Place the tray inside the freezer for about 1 hour.
After 1 hour, pull out the baking sheet outside of the tray, cut it into the desired shapes.

How to store

Keep the snacks stored inside the refrigerator.

Notes

In order to have a healthier version, I used 100% puffed rice (With no sugar added) and 100% peanut butter.
