Asian style noodles with chicken

Ingredients

1 onion | |
1 carrot | |
1 bell pepper | |
¼ cabbage cut into strips | |

Other veggies options: Zucchini, Mushrooms, Sprouts, Peas, Cauliflower and more | |
400g Chicken breast cut into cubes | |
10g baking powder 1 bag | |
200g dry noodles Rice noodles/Spaghetti |
Sauce
⅓cup GF soy sauce | |
⅓ cup dates honey / honey You can normal honey also, I love using the dates because of the color it gives | |
Sesame oil |
Directions

Cook the noodles
If you use rice noodles let them cook inside a bowl with boiling water and if you use spaghetti, cook it as you normally would.
Once cooked, drain and set aside.
Make sure to cook both options a little less than stated on the package instructions (they should be a bit underdone)

Cook the chicken
Heat a wok, with about 3 tbsp of oil, over high heat.
Right before adding the chicken to the wok, mix the chicken cubes with baking powder, it should give them a nice coat while cooking.
Add the chicken cubes to the wok and once they are ready, take them out to a new plate – we will add them later on.

Cook the veggies
To the same hot wok, add another 2 tbsp of oil.
Then, add all the veggies slowly (Except the green onion and coriander), when you start with the stiffest ones, which require more cooking time, to the softest ones. Eventually, you should have all the veggies cooked evenly.
Once the veggies are properly cooked, turn down the heat, bring back the chicken into the wok, and add the soy sauce and dates honey/honey. Stir well.

Put everything together
Add the cooked noodles to the wok and mix well. You want the sauce to cover all of your ingredients- the veggies, the chicken, and noodles.
Turn off the heat and add the chopped coriander and green onion. Drizzle some sesame oil on top of everything (I love the taste of sesame oil so I drizzle about 10 drops).
Mix everything again and ENJOY!

Notes
I feel like this dish can be so creative and adjustable! Feel free to change it or add more/other veggies that you personally love. You can also replace the chicken with tofu, for example, you can add at the end some peanuts… Be liberate 🙂
